When we talk about summer, we automatically think of the heat and the holidays. Therefore, a healthy, nutritious and fresh diet is all we need to avoid feeling heavy at this time of year. Today we leave you, next, some typical recipes of fresh and quick meals to make that you can try this summer and that, in addition, provide a large number of nutrients to our body.

The word fresh can have many connotations. However, when we talk about the term fresh meals, we are referring to all those dishes that contain natural ingredients, which require rapid consumption to enjoy a better flavor, and also to all the dishes that do not need to be cooked with heat, that is to say, they are served cold.

Fresh food recipes for summer

- Gazpacho

The ingredients you will need for this refreshing recipe are the following:

  • ½ kilo of ripe tomato
  • 1 clove garlic
  • 1dl of olive oil
  • ½ green pepper
  • ½ cucumber
  • a pinch of salt

For its elaboration:

Blanch and peel the tomatoes and place them in a bowl. Add the peeled and chopped cucumber, the pepper and the garlic clove. We crush or beat the ingredients for a few seconds until a dough is left and we add the pinch of salt. At this point we can try it, since according to taste we can add more garlic or a splash of vinegar to add a little more power to the flavor. If what we want is to thicken it a little, we can add a slice of bread soaked in water to the mixture and beat again. Finally we add the oil and stir the final mixture. Once we have the gazpacho, we pass it through a strainer to prevent lumps or skins from accumulating. We put it in the fridge and let it cool for about an hour. We can accompany it with pieces of cucumber, boiled egg or even Serrano ham. Delicious!

- White garlic

The ingredients you will need for this recipe are the following:

  • 3 garlic cloves
  • Water
  • Apple vinegar
  • For the garnish:
    • 200g almonds
    • 200g bread crumbs
    • Oil
    • Salt
    • Melon and ham

For its elaboration:

The first thing to do is put the breadcrumbs in a large bowl, add cold water and let them soak while we prepare the rest of the ingredients. The next step is to shell the almonds and blanch them in a saucepan for a couple of minutes with boiling water. Then we remove the skin and add them to a bowl to beat them. Add the garlic cloves, vinegar and salt (to taste) to the bowl and begin to blend until obtaining a homogeneous cream. Add the oil little by little while we continue to grind. For the garnish, make some small melon balls and dice the ham. We serve it in an individual glass for each one and let’s eat!

- The Catalan esqueixada

The main ingredients to make this recipe are:

  • 500g of cod
  • 4 tomatoes
  • ½ onion
  • black olives
  • Extra virgin olive oil
  • Ground pepper
  • Salt
  • Optional: we can add aromatic herbs, a hard-boiled egg, anchovies ...

For its elaboration:

To desalt the cod, we soak it for two / three hours and change the water approximately every hour. In case it is already desalted, we crumble it and reserve it. Meanwhile, we wash the tomato and chop it into small cubes. We add it to the cod dish, with the chopped onion and mix all the ingredients well. We put the black olives on top, add a little ground black pepper, a drizzle of oil and let it rest in the fridge. Once cold, you can plate it!

- Salmon And Avocado Tartar

The ingredients that we are going to use are:

  • 500g of natural salmon
  • 1 avocado
  • 1 spring onion
  • 1 tablespoon lemon juice
  • 1 tablespoon capers
  • 1 tablespoon soy sauce

For the preparation of this delicious dish we are going to follow the following steps:

The first thing we are going to do is drain and crumble the natural salmon. Once the salmon has been crumbled or cut into small pieces, we chop the chives and capers. Next, we cut the avocado into small cubes and in a bowl we mix all these ingredients, add the lemon juice and finally the soy sauce. Mix well and plate to enjoy its incredible flavor!
